Why a Cup of Flour Doesn't Weigh the Same as a Cup of Sugar
If you've ever weighed out a cup of flour and a cup of sugar side by side, you've probably noticed something surprising: the sugar is noticeably heavier. A cup of all-purpose flour weighs around 120 grams, while a cup of granulated sugar weighs about 200 grams — nearly 70% more, even though both fill the exact same measuring cup. Understanding why this happens is one of the most useful things you can learn as a home baker.
Volume measures space, not mass
A "cup" is a unit of volume — it tells you how much space an ingredient occupies, not how much it weighs. Weight, or mass, depends on how densely packed the material inside that space actually is. Two substances can occupy the identical volume and still have very different weights if their particles pack together differently. This is the entire reason a cooking measurement converter needs an ingredient-specific density, not a single blanket conversion factor for every ingredient.
Why flour is lighter than sugar
Flour particles are extremely fine and irregular in shape, which means they don't nest together tightly. When you scoop flour into a measuring cup, a significant amount of the volume is actually air trapped between particles — sometimes as much as 20-25% of the cup's volume. That's why sifting flour, spooning it into a cup, or scooping directly from the bag can produce meaningfully different weights for the "same" cup measurement. Granulated sugar, on the other hand, is made of small, relatively uniform crystals that settle and interlock more efficiently, leaving much less air space. That denser packing is why a cup of sugar weighs so much more than a cup of flour despite occupying the same volume.
It's not just flour and sugar
This same density principle explains the wide range of weights across common baking ingredients. Honey, being a thick liquid with almost no trapped air, packs far more mass into a cup — about 340 grams — than any dry ingredient. Rolled oats are bulky and full of air pockets, weighing only about 90 grams per cup. Butter sits in between at roughly 227 grams per cup, since it's a solid that can be packed fairly densely once softened. Brown sugar is an interesting case: because it's typically "packed" into the measuring cup as directed by most recipes, it ends up weighing more per cup (about 213 grams) than granulated sugar despite being a similar type of ingredient.
Why this matters for your baking
If a recipe was developed and tested using weight measurements, but you're measuring by volume with a technique different from what the recipe writer used, you can easily end up with 10-20% more or less of an ingredient than intended. In baking, where ratios between flour, fat, sugar, and liquid directly affect texture and structure, that kind of variance can be the difference between a cake that rises properly and one that turns out dense or dry.
